A Taste of Spain - Preparing a perfect Paella In addition, when cruising around Spain you might have a change to try the most famous Spaish dish. Paella is a classic and is as versatile as it is delicious. Here's a traditional recipe for seafood paella if you want to have a go! Spanish famous dish, Paella Ingredients: 2 cups Spanish short-grain rice (such as bomba or Calasparra) 4 cups chicken broth or seafood broth 1 onion, finely chopped 4 cloves garlic, minced 1 red bell pepper, sliced 1 green bell pepper, sliced 1 tomato, grated 1/2 teaspoon saffron threads 1 teaspoon smoked paprika Salt and pepper to taste 1 pound mixed seafood (such as shrimp, mussels, clams, squid) 1/2 cup frozen peas 1 lemon, cut into wedges Olive oil Fresh parsley for garnish Instructions: First, heat the chicken or seafood broth in a saucepan and keep it warm over low heat. Second, in a paella pan or large skillet, heat a few tablespoons of olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute. Then, add the sliced bell peppers to the pan and cook until they start to soften, about 5 minutes. Stir in the grated tomato, saffron threads, and smoked paprika. Cook for a few minutes until the tomato breaks down and the mixture becomes fragrant. Add the rice to the pan and stir to coat it with the tomato mixture. Cook for a couple of minutes to toast the rice slightly. Then, pour the warm broth into the pan, stirring gently to distribute the ingredients evenly. Season with salt and pepper to taste. Bring the mixture to a simmer and let it cook uncovered for about 10-15 minutes, stirring occasionally. Once the rice has absorbed most of the liquid and is almost cooked through, arrange the mixed seafood on top of the rice. Nestle the seafood into the rice mixture but do not stir once you've added it. After that, sprinkle the frozen peas over the top of the paella and cover the pan with a lid or aluminium foil. And then let the paella cook for another 5-10 minutes, or until the seafood is cooked through and the rice is tender. Finally, remove the paella from the heat and let it rest, covered, for a few minutes before serving. Garnish with fresh parsley and lemon wedges. Serve hot and enjoy!
