Taste of the UK – British Fish & Chips
Fish and chips is a British classic, consisting of crispy battered fish served with golden chips. Here’s a traditional recipe for you to make and enjoy at home or while you are cruising around the UK!
Ingredients.
For the fish:
- 4 fillets of white fish (such as cod, haddock, or pollock), about 6 ounces each
- 1 cup all-purpose flour, plus extra for dredging
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cold beer (such as lager or ale)
- Vegetable oil, for frying
For the chips (fries):
- 4 large potatoes, peeled and cut into thick strips
- Vegetable oil, for frying
- Salt, to taste
Instructions:
- Start by preparing the chips. Rinse the potato strips under cold water to remove excess starch. Pat them dry with paper towels.
- Heat vegetable oil in a deep fryer or large pot to 325°F (160°C). Carefully add the potato strips in batches and fry for about 5-6 minutes, until they are just starting to soften but not yet golden. Remove them from the oil and drain on paper towels. Increase the heat of the oil to 375°F (190°C).
- While the oil is heating up, prepare the fish batter. In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper. Gradually whisk in the cold beer until you have a smooth batter. It should be thick enough to coat the back of a spoon but not too thick.
- Spread some flour on a plate. Dredge each fish fillet in the flour, shaking off any excess.
- Dip the floured fish fillets into the batter, ensuring they are evenly coated.
- Carefully place the battered fish fillets into the hot oil, one or two at a time depending on the size of your fryer or pot. Fry for about 5-7 minutes, turning occasionally, until the fish is golden brown and cooked through. The cooking time will depend on the thickness of the fish fillets. Remove the fish from the oil and drain on paper towels. Keep warm while you fry the remaining fish.
- Once all the fish fillets are cooked, return the partially cooked chips to the hot oil in batches and fry for another 2-3 minutes, until they are golden brown and crispy. Remove them from the oil and drain on paper towels. Season with salt while they’re still hot.
- Serve the fish and chips hot, with optional accompaniments such as malt vinegar, tartar sauce, or mushy peas.
